Bio: Dodi Wicks has a B.S. in Dietetic and Nutrition obtained from Florida International University in Miami, FL. She worked in Vero Beach, FL, her home town of 26 years before transplanting to the Charlotte area of North Carolina. She began working with Morrison Healthcare and Novant Health in 2008 as a Clinical Dietitian at Presbyterian Medical Center. At that time she worked on 6A, Adult and Adolescent Behavioral Health. In 2010 her clinical areas of coverage changed to ICU and Neonatal ICU. She obtained her Board Certification in Nutrition Support in 2010 and re-certified in 2015. In 2012, she became Clinical Nutrition Manager over a fabulous group of Clinical Dietitians. She then became Regional Clinical Nutrition Manager over all Novant Health facilities in addition to a few shared services accounts in 2015. She juggles her role and responsibilities with her love for treating patients’ nutritional care and working with interdisciplinary care team members in ICU

Bio: Liana has been a Registered Dietitian for over 15 years. She has obtained her Bachelors of Science Degree in Human Ecology from Montclair State University, Upper Montclair New Jersey; and a Masters of Clinical Nutrition from the University of Medicine and Dentistry School of Health Related Professions, Newark, New Jersey. Having experience in community health, food service management and clinical nutrition, Liana is presently working in Long Term Care. One of her favorite jobs was as an adjunct college professor, Liana enjoys precepting Dietetic Interns and teaching students.

Bio: Beverly Speroff, RD, LDN, is the Assistant Section Chief of the Nursing Home Licensure and Certification Section in the Division of Health Service Regulation. Ms. Speroff has worked with the Nursing Home Section since 1992. Ms. Speroff graduated with a Bachelor of Science degree in Dietetics from Purdue University. She has experience in both acute and long term care settings.

Bio: Kevin graduated from the University of North Carolina with a Bachelor of Science degree in Food and Nutrition in 1991. He became a Registered Dietitian, after completing an internship, before taking a Food Service Director position with ARAMARK Corporation in 1992. He worked for ARAMARK in the hospital service management world, moving five times through four states over those 15 years. During his tenure with ARAMARK he oversaw operational responsibilities for dietary, environmental and laundry services.

Bio: Vaishali graduated with a Bachelor of Science in Nutrition in 2012 and graduated with a Master of Science in Public Health Nutrition in 2014 from the University of Tennessee, Knoxville. She recently obtained her Certified Nutrition Support Clinician certification (CNSC) in 2016.
Vaishali began her career as an Adjunct Nutrition Faculty Instructor at ECPI University in Charlotte, North Carolina. There she taught an introductory nutrition course to nursing students.
At the end of 2014, Vaishali began her career with Morrison Healthcare and Novant Health. Currently, Vaishali is the Inpatient Oncology Dietitian at Novant Health Presbyterian Medical Center, an area that she has developed a deep passion for, and hopes to further specialize in. Vaishali enjoys reading and conducting research in all aspects of health and nutrition, having recently published her first paper in the Journal of the Academy of Nutrition and Dietetics, and hopes to continue to contribute to scientific literature in the future.
