Child Nutrition Culinary Specialist

The essential function of the position with the organization is to assist in researching, developing,
and implementing various culinary training projections that will enhance the Department of Child
Nutrition. This position will also assist in the development and implementation of new recipes and
menus along with other Personnel that will meet local, state, and federal Guidelines.
Primary Job Functions:
• Check the quality of raw or cooked food products to ensure that standards are met.
• Monitor sanitation practices to ensure that employees follow standards and regulations.
• Must have knowledge of kitchen equipment, operation, and maintenance.
• Order or requisition food or other supplies needed to ensure efficient operations.
• Supervise or coordinate activities of staff member engaged in food preparation.
• Inspect supplies, equipment, or work areas to ensure conformance to established standards.
• Determine how food should be presented and create decorative food displays.
• Instruct staff members in the preparation, cooking, garnishing, or presentation of food.
• Estimate amount and cost of required supplies such as food and ingredients to control cost.
• Collaborate with other personnel to plan and develop recipes or menus, considering such
factor as seasonal availability of ingredients or the likely number of customers per item.
• Participate in development and conducting of training for personnel to encourage efficient
performance.
• Understand regulations and ensure that cafeteria operations comply with federal, state, and
local laws.
• Perform all other duties as assigned by the child nutrition director.

JOB DESCRIPTION:
To assist with the management of the school food service program in accordance with federal and state laws and regulations, local and state health ordinances, and school district policies.
DUTIES AND RESPONSIBILITIES:
Supervise child nutrition workers/assistants in the school food service operation; including USDA breakfast/lunch, after school snacks, approved special functions or other food service needs.
Supervise the preparation of menus as directed or approved by the child nutrition programs director and assists in meal preparation when necessary.
Order food and supplies as assigned through the central office.
Maintain records as necessary for accountability.
Train and evaluate child nutrition staff at the direction and/or approval of the child nutrition programs manager or supervisor.
Ensure compliance with safety and health regulations as established by federal, state,
and local agencies.
Participate in all managers’ training programs and staff meetings.
Follow recommendations of child nutrition programs director in matters of program
operations.
Have a working knowledge of computer systems or manual registers at assigned school.
Obtain approved substitutes for staff on leave.
Interview and recommend candidates for employment as child nutrition assistant
worker/assistant and cashier.
Supervise the cleaning of the kitchen, serving line, storage, and dining areas; checks all
cafeteria equipment for safety and cleanliness and notifies appropriate authorities when repairs and/or replacements are needed.
Evaluate child nutrition programs staff according to criteria and documents approved
by the Board of Education.
Ensure all child nutrition programs staff (worker/assistants and cashiers) wears the
selected uniform for the school.
Perform related child nutrition program duties as assigned by the principal, director, area supervisor, or child nutrition programs manager.

To assist in the administration of the school food service programs by executing budgetary control, operational support, and other functions as assigned in accordance with federal and state laws and regulations, local and state health ordinances, and school district policies.
DUTIES AND RESPONSIBILITIES:
Perform general secretarial duties.
Act as a receptionist; receives, screens, and gives directions to visitors; answers routine questions concerning system policies and procedures.
Keep accurate records and information.
Possess knowledge of policies and procedures and services of the Board of Education.
Schedule meetings and appointments.

Receive, sort, and distribute mail.

Reconcile physical inventories with records.
Generate and/or reviews inventory reports for balances and shortages.
Compare inventories to office records and computes figures from records such as invoices to obtain a current inventory.
Order and allocate USDA/Commodity foods to schools in a timely manner.
Perform other duties as assigned.
